Unfortunately ProTools LE does not offer 5.1 tracks. You'll have to upgrade to TDM/HD in order to gain that ability. The good news is, you don't need DV Toolkit if you upgrade to TDM. Video to an iso booth can be handled via a PCI video card, or a second monitor devoted to displaying digital video. Bouncing from ProTools is relatively simple; DVD authoring is a completely different animal. It's more complicated than the initial impression. I know you don't want to bring this to a facility, but it may be worth it to think about doing a final mix. You can certainly edit dialog and effects, and prep so that you don't spend time making fixes on the stage. There is a lot of backend work that goes into creating a good mixing stage, not to mention the experienced ear of a professional mixer. My final word is, weigh the price of a facility against the investment of gear. If you plan on continuing to do these sorts of jobs it may be worthwhile to invest in an HD rig and a control surface, spec out the room for 5.1 and soundproofing, figure out how to mix for film and video. If you want to stay on the editorial/post supervision side, many mixing facilities are reasonable and will negotiate a low budget rate. Best of luck.
